The Role of Foods and Diets in Pregnancy Metabolic Health

Pregnancy is a critical period during which maternal nutrition plays a central role in shaping both immediate and long-term health outcomes for both mother and child. Metabolic health during pregnancy influences key factors such as gestational weight gain, insulin sensitivity, lipid metabolism, and the risk of conditions like gestational diabetes and preeclampsia. The quality and composition of the maternal diet can significantly impact these metabolic processes. Understanding how specific foods, dietary patterns, and nutritional interventions contribute to optimal metabolic function during pregnancy is essential for improving maternal health, birth outcomes, and long-term disease risk for both mother and baby. This Article Collection aims to explore the intricate connections between foods/diet and metabolic health in pregnancy, and attempts to bring together research on dietary strategies, metabolic adaptations, and clinical implications to advance knowledge in maternal nutrition.


Elisabet Børsheim, PhD, is a Professor in the Department of Pediatrics and the Department of Geriatrics (secondary) at the University of Arkansas for Medical Sciences in Little Rock, USA. She is an Associate Director of the Arkansas Children’s Nutrition Center (ACNC), a national human nutrition center supported by the USDA-Agricultural Research Service. Dr. Børsheim’s research focuses on maternal health during pregnancy, pediatric cardiometabolic health, particularly in relation to exercise and nutrition, and the prevention of metabolic disorders across the lifespan.

This Article Collection invites cutting-edge research and comprehensive reviews exploring the role of foods and dietary patterns in shaping metabolic health during pregnancy. Submissions may focus on a range of topics, including the impact of macronutrient composition, micronutrient adequacy, dietary diversity and pattern, nutrition in the setting of other lifestyle factors, and specific dietary interventions on maternal metabolic outcomes. We welcome review papers or original research examining the effects of whole foods, bioactive compounds, and functional nutrition in mitigating metabolic disorders such as gestational diabetes and hypertensive conditions. Additionally, research on personalized nutrition, gut microbiome interactions, and the role of dietary guidelines in optimizing pregnancy health is of interest. By gathering multidisciplinary insights, this Article Collection aims to advance evidence-based nutritional strategies that support metabolic health in pregnancy.
